Black Forest Cake

Malbec Black Forest Cake

(plant-based alternate ingredients in brackets)

 Ingredients

1.5 C / 190 g all-purpose flour

3 scoops Winecrush Powder

2/3 C / 65 g unsweetened cocoa powder

1 1/4 tsp / 8 g baking soda

1/4 tsp / 10 g baking powder

3 eggs (or 300 g soft tofu)

1 2/3 C / 340 g sugar

1 tsp / 5 g vanilla extract

1 C / 75 g (plant-based) mayonnaise

1 1/3 C / 250 g water

 

 Directions

  1. Preheat oven to 350F / 175C. Grease and lightly flour two 9 inch round cake pans; set aside
  2. Medium bowl, combine flour, cocoa, baking soda and baking powder; set aside
  3. Large bowl, with electric mixer at high speed beat tofu, sugar and vanilla for 3 minutes or until light and Beat in mayonnaise at low speed until blended
  4. Alternately beat in flour mixture with water, beginning and ending with flour mixture. Pour into prepared pans
  5. Bake 30 minutes or until toothpick comes out clean
  6. On wire racks, cool 10 minutes; remove from pans and cool completely
  7. Frost if desired, or serve with fresh fruit
